Pineapple & Raisin Rice Pudding
This is a twist on an old classic that I used to have pretty much every weekend when I was a kid growing up…..rice pudding with raisins and a pineapple compote type thing on the side – good times.
You need……..cinnamon, 2 tbsp sugar, 100ml pineapple juice, 500ml milk (any type, apart from breast milk), 150g pineapple, tin of condensed milk, some raisins & 200g of basmati rice.
First grill up your pineapple slices until they are looking brownish, then transfer it to a pan and pour in your pineapple juice keep stirring over a heat until the juice goes away and turns all sticky. That’s the sauce done – easy huh!
Right, now get your rice and fill it with some cold water for 10minutes, this will get rid of the murky stuff on the rice. Now get your milk on to boil, drain your rice off and then add it to the milk in the pan. Let it simmer for a bit until the rice is “done”, so I just waited until the rice went soft. Once thats done, chuck in the tin of evaporated milk – most of the milk should have been absorbed by the rice. Also throw in your raisins and sugar. Give it all a good stir round and chuck in your cinnamon.
Then it’s done! Put the pudding in a bowl, grab some compote and eat it up! It was really yummy to make this, although not the way i’ve seen it made before it was still edible at least!
