Apricot & Mozzarella Chicken Parcels

This was a ridiculously fun and easy recipe to put together, although some of the techniques used look tricky, I promise it’s really very simple!
The chicken has a great apricot jam filling (you could use any other jam flavour) and is wrapped in a secure bacon package.
The taste is a fab combo of flavours, and it went down really well with Mrs Barry.
