Cajun Pesto Turkey Wraps with Sweet Potato Chips

Quite proud of this one guys, a nice and easy dish for the Summer with a cool mix of tastes – and I came up with it myself!
First of all I got some sweet potatoes (4 or so), peeled them and cut into chunky chips, covered in oil and pepper then plonked them in the oven for 30 mins turning half way through :-) That’s all it takes to make sweet potato chips, fries etc whatever you call them!

I then put some chopped onion and pepper on a griddle pan for 5 mins to soften them, next I added mushrooms for a couple of minutes before bringing in my turkey slices. Once they were cooked through I added some cajun spice to give it a bit of a kick (you could add anything you want!) finally a few bits of lemon and lime zest for the last minute and it’s starting to come together…..
In a bowl I mixed a jar of pesto with just under a tablespoon of sour cream, and lemon and lime juice. Once this was ready, the turkey mixture was added in and merged together. Give it a taste at this stage as it’s awesome!

I put on some corn on the cobs and served the cajun pesto turkey stuff in warm wraps……..easy peasy!!!
