Cod wrapped in bacon with rosemary & sweet potato chips
Ok first of all let me point out that this video is a tribute to the late Steve Irwin, whom I was a big fan. Any reference to crocodile meat is actually cod too!
Very simple Jamie Oliver recipe this one: -
Grab some chopped rosemary, add olive oil and mix.
Then get your cod and run it all over the herb and oil so it sticks to it.
Wrap it in bacon and plonk a rosemary twig on top, shove it in the oven for just over ten minutes and it’s done!!
To add a bit more to it, I just chucked some sweet potato cut into chunks (seasoned with leftover rosemary)in the oven to make chips (fries to you Americans!) and it was truly gorgeous!
