Minted Lamb Yoghurt Avocado Medley
This is a pretty unique dish, and rediculously healthy.
Simply put it’s lamb steaks with mint yoghurt topping sat over a medley of sweetcorn, peas, rocket salad, parmesan and avocado. Got that?!?!
It’s very tasty, but won’t fill you up completely – have some potatoes with them or a ciabatta! Here’s the video….I enjoyed cooking this dish and it took approx 20 minutes to make.
