Ratatouille
My second recipe attempt……..ratatouille (no, not the film). This was a recipe from Gordon Ramsay’s “Make’s it simple” book (buy it here http://www.gordonramsay.com/corporate/products/books/ ) - and was supposed to have a rustic feel. However, as I was cooking for the ultimate ratatouille expert, my Daughter Phoebe who lives on the stuff – I knew it was going to need a touch of sweetening up.
Preparing the vegetables were pretty easy, just needed a big, clumpy, sharp knife and well, the ability not to cut my fingers – easy huh. I tried to cut a corner by buying a “mini-chopper”, and cut my veg up quick. Unfortunately the onions ended up turning into a purée!! But, later on this actually sweetened the dish further so I can pretend that I meant to do that ok?!
I chucked in some tomato purée to sweeten it up a bit, as personally it was a bit too dry. As you will see from the video I think Phoebe liked it in the end!
