Bubble and squeak

Ah, bubble and squeak – so called because that’s the noise you hear when you are making it.
This is a tradition mainly in the UK (although I stand corrected!) that you grab all your leftover veg from Christmas day and fry it up in a pan. For this one I added in an onion and some bacon bits, then finished it with a poached egg on top.
Yummy, filling, “customisable” , fun…….. you will love this recipe but with the high veg count, perhaps your relatives may not!
