Chicken Skewers with Lime ‘n’ Thyme Rice
This was a very nice dish, and the cool thing was you can customise it loads. It’ll also work well on the barbeque.
Quite simply, grab yourself some skewers – cut your chosen meat and veg up into suitable chunks. Thread them on the skewers and griddle them!! I went for courgette, pepper, cherry tomatoes & shallot’s alongside chicken breast. Griddle them for 3 minutes each side and ensure the meat and veg is cooked through then eat away.
To enhance the ingredients I put them in a marinade of lime juice & zest, olive oil and cajun spice prior to griddling. Although this is optional, but go crazy and try some cool stuff out if you can!
The rice was cooked, then a good helping of thyme, lime juice and butter were mixed in to give a unique flavour.
This recipe can be customised completely – after all, it’s just some food on a stick! So you have no excuse, pick up the pan and have a go
